okay so this isn’t my picture, but this is basically what I just ate. My mom made spaghetti squash shrimp lo mein. 
spaghetti squash
shrimp
zucchini
onion
mushrooms
+ ginger, cumon and a little soy sauce
obviously you can change up the stuff you put in it. snow peas, carrots, chicken, broccoli, etc. 
she used half the squash other than that she didn’t measure anything, but it was definitely more than enough for two people. (hello leftovers!)
(the siblings super picky eaters tried some too and they liked it, so it’s a winner)
